Peanut Biscuits

This recipe is converted from the WW The Big Book of Beautiful Biscuits and I made 65 small biscuits.

125 g butter
110 g brown sugar
1 egg
170 g self raising flour
1/2 tsp bicarbonate of soda
85 g rolled oats
40 g coconut
85 g salted peanuts (or raw peanuts & 1/8th tsp salt)
25 g finely crushed cornflakes
Crushed cornflakes, extra

Cream butter and sugar 2 mins/speed 3.
Add egg and beat 1 min/speed 3.
Add remaining ingredients apart from the extra crushed cornflakes and knead 1 minute.
Place scant teaspoons of mixture onto 2 large lined trays and flatten with a fork.
Sprinkle extra crushed cornflakes over the top.
Bake 180oC 10-12 minutes until golden brown.

I have the original copy of this Judy and love it. I think I have made about 90% of the biscuits in it over the years. It is a well loved book.
May all dairy items in your fridge be of questionable vintage.

I grew up with this book too and now have my own copy. Have made lots of recipes from it including this one. It would have to be my favourite AWW cookbook, followed closely by sweet old fashioned favourites. Only read yesterday that they are reprinting it due to popular demand.
Lovely to have the tmx conversion.
