As a new TM owner and a new maker of bread/pizza, I need to ask a question which sounds like I'm a complete idiot,I think, so forgive me.
The question is: If I make bread dough or pizza dough (as I just have) do I have to bake it there and then?
Can I make it in advance and freeze it/store it in the fridge? If I can, I presume I have to do that after it has been through it's "proves" cycle. How long can I store it for? Will it spoil?
Maybe I can't freeze or refridgerate, but I thought I would ask you experts.

Yes you can refrigerate dough after the 1st rise, i think the longest amount of time in the fridge that i have done is 2 days and form memory, i was not happy with the end results but ok if using to make pizza
I have done the slow rise bread dough and have kept it in the fridge for 7 days.

My DS receives a pizza magazine very month and i remember reading if u are planning to freeze your pizza dough you need to add extra yeast. i really should keep those magazine

Past94, interesting question. I have frozen pizza dough but didn't like the end result.
AS you can freeze Sour Dough starter and then revive it, dough made with dried yeast should be OK, but I have never tried it.
You might to give it a go and tell us what happens. !

I freeze pizza dough, the jamie oliver recipe freezers. Fresh gives you a thick base, frozen the base is a thin style pizza base.

When I was a Home Ec teacher we would get the kids to make the dough one week, freeze it and thaw, shape and bake it the next. It always worked and they always loved it.

I've often frozen pizza dough without any problems, finished product is always ok

I've found that if I freeze the raw dough it isn't as good, but if I freeze rolled out and partially cooked dough it is fine.

I usually make it fresh as its so quick and teninas pizza base there is no waiting time or rising time.. Just the time you are preparing the ingredients... So simple and takes all of 5 mins to prepare

I always precook my bases for 7 mins before freezing make sure you prick all over with a fork before putting into the oven I got this tip from best recipes site

Kim - I'll have to try Tenina's one I've been using the demo Pizza Bianca one which is 10 - 15 min rise I think (from memory) But if I can cut more time out that's even better.
Connars Nan - I'd never thought about having them shaped and ready to go like that. Brilliant tip! Mine are just ziplocked, wrapped in glad wrap or vacsealed into bags then thrown in the freezer, then I thaw it and give it a quick knead before shaping and putting it in the freezer. (sounds like so much more work)
