Sweet & Spicy Pork
Converted from an AWW cookbook
Ingredients:
1 onion, peeled and quartered
2 cloves garlic
10ml oil
1 red capsicum, deseeded and sliced
1 green capsicum, deseeded and sliced (I used yellow)
1 tsp turmeric
1 tsp garam masala
1/2 tsp ground cumin
1/2 tsp ground ginger
400-500g pork fillet, diced (the original recipe says to slice them but I was worried they would get wrapped around the blades)
440g tin tomato soup (I used plain tinned tomatoes and added extra seasoning)
1 tbsp mango chutney (I used sweet chilli sauce)
cornflour mixed with water, to thicken if desired
Method:
1. Chop onion and garlic for 2 seconds/speed 5.
2. Add oil, capsicums and spices. Cook for 7 minutes/90 degrees/reverse + soft speed.
3. Add pork, tomato soup and chutney. Cook for 8 minutes/90 degrees/reverse + soft speed.
4. Add cornflour slurry, if using, and cook for a further 2 minutes/90 degrees/reverse + soft speed.
5. Too easy!
I transferred the pork to the thermoserver while I steamed rice and vegetables. It was delicious

Aussie Brenda - Thanks for this Amy, I had some pork ( a leg that I steamed in the Varoma) left over so I have made sweet and sour sauce to go over it, yummy has it for lunch with some rice.
JD - It works well with cooked meat as AB has already said. It's a great recipe, thanks Amy. I used some home made tomato soup I had in the freezer.

Love the look of this recipe Amy and being an AWW recipe, it's not surprising that it was delicious. Have all those ingredients so have printed out the recipe for next week.

I must admit I am surprised at how many cake recipes you do Amy considering you don't eat them yourself.
Yes I'm a pork girl and always have pork fillets in my freezer. Friends bought a bag of assorted coloured capsicums down for us last week - I don't usually have them in the fridge unless I have a specific recipe in mind.

To look back at all the cakes I've cooked and converted, I'm very surprised too Judy
It makes me feel guilty that I make such unhealthy things to tempt other people....
But its fun for me to do and everyone else enjoys eating them
It was nice of your friends to bring you those capsicums, and now you have a recipe!

Looks good Amy and I like all the flavours but neither of our kids eat capsicum so don't think this will go on the list unfortuantely.

I was thinking I could try it with other sweet vegetables, but it would be hard to replace the capsicum in this dish because the flavour fits perfectly.

I was going to make a chicken curry with some thigh fillets I had cooked yesterday but then decided to try your recipe instead Amy. It works well with cooked meat as AB has already said. It's a great recipe, thanks Amy. I used some home made tomato soup I had in the freezer.
