Prosciutto Wrapped Chicken with Parmesan Stuffing:

Ingredients:
1 cup fresh white breadcrumbs, done in preparation, see below.
1 clove garlic
1/4 cup chopped parsley, done in preparation, see below.
3 drained anchovy fillets
1/3 cup grated parmesan, done in preparation, see below.
20g melted butter, done in preparation, see below.
4 chicken breasts
4 pieces prosciutto
Preparation:
Heat oven to 2000C.
Place butter into bowl and melt on 50, speed 2 until melted.
Add a slice of frozen bread, clove of garlic, pieces of parsley, anchovies, parmesan. Speed 8, approx. 20 seconds.
Check and if not mixed well and broken up add a bit more time. I found the anchovies took longer.
Cut a slit in each chicken breast and place a 1/4 of the stuffing in.
Wrap a piece of prosciutto round and secure with a toothpick.
Brown in a frypan and then bake in the oven for 20-30 minutes, depending on the size of the chicken breast.
To serve, slice the chicken across the breast so that the filling shows.

Tips/Hints:
This is very quick to prepare as it is all done in the bowl. Then you just have to cook the breasts.
