Chelsea's Creamed Corn
«

This recipe was posted on the forum by Chelsea so I am giving it it's own post as someone is always looking for it.
JD Moderator.
I (Chelsea) made this again last night and wasn't keen to use creamed corn from the can because of the additives. I decided to have a go at making my own creamed corn using my TMX and an old recipe. It was so quick and tasty that I will be doing it again. If anyone is interested in making their own here is my recipe:
Creamed Corn - makes 300g
2 tablespoons butter
2 tablespoons plain flour
1 cup or 250ml milk
2 cups corn kernels tinned, thawed or fresh
Salt and pepper
Melt butter for 1-2 minutes at 90
o
on speed 2.
Add flour and stir in for 20 seconds on speed 3.
Set TMX cooking at 90
o
on speed 3 and gradually add milk.
When mixture thickens (when the liquid noise finishes) add corn kernels and cook for 3 minutes on 100
o
at speed 3.
Season with salt and pepper.
Puree for 10 seconds on speed 6.

I meant to post on here when I made this last week, but it slipped my mind so here I am now
This is such an easy recipe! I used it in a potato bake and it was so much better than using a bought can of creamed corn. And it was even better knowing there were no preservatives or artificial things in the finished meal
Awesome recipe Chelsea, thank you so much, and thanks Judy for putting it somewhere easy to find!

I have just made this again to use in a recipe, and when I weighed it back into the TMX it came up as nearly 500g!
I measured out the milk and corn so I don't know how I've ended up with so much?

The weight of the milk and corn add up Amy so 500g isn't surprising.
