GF Lasagne (from German GF brochure)

Ingredients for homemade pasta
140g brown rice
40g soya beans
2 eggs
35g olive oil
1 ½ tsp salt
Ingredients for bolognese sauce
10g oil
1 onion
parsley
1 clove of garlic
1 carrot, cut into chunks
70g tomato puree
300g minced beef
½ tsp mild paprika
1 ½ tsp salt
3 grindings of black pepper
2 tbsp basil, fresh, cut into strips or 2 tsp dried
500g tomatoes, quartered
½ tsp sugar
Ingredients for cheese sauce
150g cheese (e.g. gouda, emmental)
500g milk
40g butter
35g rice flour
½ tsp salt
2 pinches of pepper
2 pinches of nutmeg
To make the pasta dough:
1) Add rice to the TMX, mill 1m/speed 10. Set aside.
2) Add soya beans to the bowl, mill 1m/speed 10.
3) Add rice flour, eggs, oil and salt and mix 1 ½ m/dough function.
4) Roll dough into ball, wrap in cling film and leave to rest in fridge for 30 mins. Then roll out the dough between two layers of cling film so that it is as thick as the back of a knife and cut dough into 9 rectangles (about 8 cm x14 cm).
To make bolognese sauce:
1) Add oil, onion, parsley, garlic and carrot to the bowl and chop 3s/speed 5. Then cook 2m/varoma/speed 2.
2) Add the remaining sauce ingredients, cook without measuring cup for 17m/100C/reverse/speed 2. Then set sauce aside and rinse out bowl.
To make cheese sauce:
1) Add cheese to bowl, chop 6s/speed 5. Set aside.
2) Add the remaining sauce ingredients to bowl and cook 7m/100C/speed 2.
3) Add cheese and melt 2m/90C/speed 2.
Layer the lasagne in a buttered baking dish. First pour in a thin layer of cheese sauce, then lasagne pasta and a layer of bolognese sauce. Carry on with the layers and finish with a layer of cheese sauce and bake the lasagne in a preheated oven.
Oven temperature: 200C
Baking time: about 30 minutes
