Lemon Parmesan Wafers - for food's sake

I made a half measure of these last night and they're very quick to make and tasty. There is no mention of what to do with the cornflour in the ingredients list so I presumed it went in with the zest and parmesan.

I used a biscuit cutter to make neat rounds of mix as it is powdery and doesn't stick together until it's cooked.

Next time I might put in a tiny bit of rosemary or maybe some smoked paprika.

are these suitable for dipping, or more like a cracker where you would put cheese etc on it? Do they hold together well once cooled?

They are very crispy and do hold together but a bit fragile - you'd have to be careful with dipping that half the wafer wasn't left behind. How fragile they are depends on how thickly you spread the mix before cooking as they don't spread a lot during baking (or at least mine didn't).

As they are almost completely made out of cheese they are quite rich and we thought they were better eaten without extras (dipped or spread). As Tenina suggests, they would be a good addition to a cheese board.

Oh so much to try and so little energy. I think I should do some energy food first. Maybe it's the heat. ???

I have just made a batch of these. Very nice. Quite rich as Bonsai said, but nice to nibble on.
