They are very crispy and do hold together but a bit fragile - you'd have to be careful with dipping that half the wafer wasn't left behind. How fragile they are depends on how thickly you spread the mix before cooking as they don't spread a lot during baking (or at least mine didn't).
As they are almost completely made out of cheese they are quite rich and we thought they were better eaten without extras (dipped or spread). As Tenina suggests, they would be a good addition to a cheese board.
