Tuna Stuffed Zucchini (with photo)

Tuna Stuffed Zucchini:

Ingredients:
800g zucchini
50g bread crumbs
1 clove of garlic
10g parsley leaves
20g capers
200g canned tuna (drained)
15g extra virgin olive oil
Salt, black pepper
Tomato sauce or paste

Preparation:
    * Cut zucchini in half lengthwise. (I had very big ones so I cut also widthwise)
    * Scoop out the pulp and set aside
    * Chop bread crumbs, garlic, parsley and capers for 2 seconds on Speed 10
    * Add pulp of zucchini, tuna, oil, salt and pepper. Mix for 10 seconds on Speed 4
    * Cover tray with baking paper and brush with a little oil
    * Stuff the tuna mixture into zucchini and place in the tray
    * Brush them with tomato sauce on the top
    * Cook in preheated oven at 180ºC for 30-35 minutes

Mmm, me too.  Lately I haven't seen any bigger zucchinis around, ours are so small compared to yours farfallina.

Well, judydawn I am not an expert at all but due to my search zucchini is a vegetable for summer-fall season so this explains why we have big ones around here at the moment and instead you don't  :-))

When I was very small we used to eat stuff according to season
Unfortunately that is not the case anymore.
I don't even know well the right season for the certain fruits and vegetables

Yesterday I saw a documentary named Food Inc and I am still shocked by everything I heard!

We certainly know when vegies and fruits are not in season here farfallina - the price is sky high :'( :'(  I try and use seasonal produce 99% of the time these days to keep my food budget stable. I went through a phase of buying anything I fancied but came to my senses that it was a waste of money that we could do other things with.

Food Inc aired in Melbourne about a month ago.  Not sure about elsewhere
