(4 portions)Ingredients:250g onions, halved
3 garlic cloves
40g olive oil
1 tin tomatoes, chopped (400g)
600g peppers, green/red and yellow, cut into bite sized pieces
650g potatoes, cut into 2 x 2cm pieces
1 cube of vegetable stock
1 tsp salt
¼ tsp pepper
1 tsp paprika, mild
1 tsp sugar
320g cabanossi sausage, cut into slices
1) Chop onions and garlic 3s/speed 5.
2) Add olive oil and fry 4m/varoma/speed 1.
3) Add tomatoes, 400g peppers, potatoes, vegetable stock, seasoning and sugar and cook 15m/varoma/reverse/
4) Place remaining peppers and the cabanossi slices in varoma and cook a further 10m/varoma/reverse/speed soft stir.
5) Empty contents of varoma into a large bowl, pour contents of jug over the peppers and cabanossi and stir through.
Variation:You can use vegetarian sausages (tofu) and warm them through in the varoma.
