Any type of curd, jam or fruit could be used in this slice. I used Yuzu curd from ITM2.
Name of Recipe: Citrus Curd Slice
Number of People: 12 slices
Ingredients:180g softened butter
170g castor sugar
320g plain flour
1/2 tsp baking powder
280g of any curd
40g shredded or dessicated coconut (I used a bit of both to use up what I had)
40g flaked almonds, slivered almonds or chopped hazelnuts ( I used flaked almonds and chopped hazelnuts)
50g white chocolate chips (I used roughly chopped white chocolate buttons)
Preparation:Spray a 27cm x 19cm x 3.5cm deep ovenproof dish then line with baking paper across the width (19cm) of the dish making sure it comes up a few cms above the top of the dish for easy removal of the slice.
Preheat the oven to 180
oC, fan forced.
Add the butter and castor sugar to the TM bowl and beat
1.5 mins/speed 5.Add the flour and the baking powder. Knead
15 sec give it a stir with a spatula then knead again for a further
15 secs.The mixture will resemble coarse crumbs.
Place 3/4 cup of this mixture into a bowl, add the coconut, almonds and choc chips and set aside for the topping.
Press the remaining mixture into the prepared dish.
Bake in the middle of the oven for
15 mins - do not allow it to get too brown, it should be just starting to look a golden colour.
Remove the dish, spread the curd over the base to within 2cm of the edges.
Sprinkle the crumb mixture over the curd.
Move your oven rack up 1 notch, place the slice back into the oven and cook
18 minutes. Turn the dish if the top seems to be browning unevenly.
Cool in the dish on a rack. When completely cool, remove the whole slice using the baking paper, place into a large container with a lid and place into the fridge until the curd is completely cold (if you can wait this long). It just makes for easier cutting. Place the slice onto a large cutting board and use a large knife to cut into 12 squares.
