Zaatar Bread

Make spice first

Ingredients: dry spices & herbs

1/4 cup sumac
2 tablespoons thyme
1 tablespoon roasted sesame seeds
2 tablespoons marjoram
2 tablespoons oregano
1 teaspoon coarse salt

Throw all into TM & process until desired consistency.

Dough

500g bread flour
1tsp bread improver
1 pkt of dry yeast
1/2 tsp salt
1/2 tsp sugar
310mls of hand hot water


All in TM, knead 4 mins, rise for 1 hour. Knock down for 1 minute, divide into 8 balls, flatten & shape rise for  20 mins. Brush with oil, sprinkle zaatar spice, cook at 200 for 12 mins.
Nice & crispy & tasty.

Yes, straight out of the oven is best :)

Ds & I had afternoon tea, re-heated for dinner, but not as crispy.

I will definitely try this. My kids love toasted cheese sandwiches sprinkled with za'atar, so I'm sure they will love this bread.

Hally,  looks great.  Spray with water and into hot oven ,  should crisp it.

They should like it, as you know its a mild spice. Do you make your spice?
