Name of Recipe:Piselli con Uova ( peas and eggs)

Ingredients:
1 onion chopped
Olive oil
2 cups of peas
Hot water
4 eggs
Salt
Pepper
Preparation:
Sauté the onion and oil for a few mins
Add peas add water just to cover peas cook on varoma for 10mins speed 1 on reverse MC on
Add 1 cup of boiling water and cook a further 5 mins on varoma speed 1 on reverse MC on
Insert Butterfly add salt and pepper cook, for 2 more mins on varoma MC on.
Add two eggs on either side of butterfly, put the lid back on and the MC
Leave the eggs in bowl for about 5 minuets remover eggs with slotted spoon into a plate add reaming peas on top of eggs
Drizzle with EVO
