This will be great for lunch boxes.
Here's what I found today only two ingredients
http://www.theburlapbag.com/2012/07/2-ingredient-cookies-plus-the-mix-ins-of-your-choice/However I used
1 CUP porridge oats, slightly pulverised in
with some added oat bran.
1 tsp cinnamon
2 tsp chia seeds, soaked in 4 tsp water
Handful desisted coconut,
Handful flaked almonds
Handful dried blueberries.
( small handfuls)
2 bananas
Mixed pulverised oats, cinnamon and 2 bananas in
speed 3 until mixed, and added in extra ingredients on
Teaspoonful dropped on to trays. One whole unbleached almond on each one. Flattened with bottom of a mug (bit sticky)
Baked 160' fan until done. Made about 21.
Turned over to crisp the bottoms.
Consistency different to normal cookies, but very yummy and guilt free.
Try your own varieties, dried fruits, peanut butter, choc chips, grated carrot, grated apple.
I think applesauce works if you don't like/have banana.
There are lots of comments on the webpage I've linked.
Happy baking!
