Pita BreadMakes 4 , but recipe could be doubledIngredients1 teaspoon dried yeast
1 teaspoon caster sugar (I used bread mix, so didn't use this)
½ cup water
1½ cups bread flour
1 teaspoon salt (I used bread mix so didn't need this)
1 teaspoon EVOO
Preparation Set oven to 230 degrees. Place a pizza stone or metal tray in to heat.
Place water, yeast, salt and sugar into bowl.
Heat at 37 degrees about 2-2½ minutes. Speed 1.
Add the rest of the ingredients and knead for 4 minutes.
Place into a greased bowl and set aside until double.
Punch dough down and divide into 4 pieces.
Roll each portion out to about 16cm circle. If it becomes hard to roll, set aside to rest for a bit.
Place each circle into oven, on the tray and cook for 3-4 minutes or until golden and puffed.
When removed from the oven place into a T towel to keep warm
