Rock Cakes.
20g sugar,to sprinkle over the top
Rind of 1 lemon or 1 tsp vanilla extract or Rum essence.
90g sugar
240g SR flour
60g butter,chopped into pieces
1 egg
80g milk
60g currants
Preheat oven to 180c
Place 20g sugar into TM bowl and mill 19sec/speed 9 Set aside.
Place lemon rind in TM bowl and grind 5-10sec/speed 8
Scrape down sides with spatula.
Add sugar,flour and butter.Mix 10sec/speed6
Set dial to to closed lid position and add egg,milk and currants and
for 20-40 sec ( Add sufficient milk to make either a stiff or moist mixture depending on how hard you want your rock cakes)
Place dessertspoons sized heaps onto greased tray and bake for 15-20 minutes.
Sprinkle icing sugar over the top and enjoy.
