Just in case anyone wished to make my soup, all I did was make a traditional vegetable soup, using Beetroot as one of the veggies.
I put the veggies in and blitz on speed 5 for a few seconds to keep them in largish pieces. Add something to help thicken it, like barley, red lentils or soup mix. I used a good handful. Add vegie stock to just under the 2 litre mark. Cook
, 100 speed 2-3. Just to keep the soup moving. Check after 20 minutes to make sure the veggies are cooked.
