Recipe review Minestrone soup page 85 - 2013 edition of EDC

There were complaints about the original recipe then some changes were made and now in the 2013 edition of the EDC I think they have got it right.  I used kidney beans as that was all I had, cooked it 5 minutes longer and it was nice and thick and very tasty with the addition of more salt and some pepper.

Yumbo!  Made this today and it will be cooked again and again.

I cooked it longer-about 10 mins as the carrots needed the extra time.

I've made this twice in the last fortnight using up pantry & freezer items. I didn't have any tomato paste so used Tenina's Umami paste instead and we love it including my 21 month DD.

I think the umami would give it a nice lift. Mine was quite bland.

I have never made the minestrone soup and couldn't find a review of it on here (from the original EDC book)  but luckily someone noted the changes on this forum (in another thread) so I made it according to that. Lovely soup for winter and I will be making it again. Unfortunately my two toddler daughters barely touched it but I think that is due to one getting her molars and the other being a little unwell.
