Made this today - used honey instead of maple syrup (for the sake of economy!), and didn't have quite enough cranberries so added some sultanas. I used the 5 cups of oats, found I had to put it onto 2 oven trays. It seemed to take ages to crisp up, but after leaving it in the oven for quite a while longer than was suggested, I found after it cooled it crisped up a lot
I used the 2 T of vanilla bean paste as I had made my own -
