Shoulda read the comments!  I made mine for a gift and it was very thick and the pieces of apple skin and bean were not that pleasant.  I am going to give it anyway, because it is so yummy and rename it strawberry vanilla bean fruit paste.  Next time I will blitz the ingredients and just finish off on Varoma.There definitely will be a next time!

I have made this again as I bought a tray of strawberries at the market. I doubled the recipe, used vanilla paste instead of the bean, and added the chopped apple to the sugar and blended it together until it was pulpy. I then added the strawberries and cooked it together. The first batch I cooked at the ThermoChef equivalent of varoma temp (cook temp) for 35 minutes and then bottled it. It was a lovely pink colour, but very thick. The next two batches, I cooked at 100C for 25 minutes, and then 10-15 minutes on varoma.

Did you then mix the thick batch with the thinner batch ES?  I did that recently with sweet chilli sauce when my first batch was way too thick and the consistency was perfect when mixed with a runny batch.

This jam is yummy, and the consistency is great for me. Am gifting it up for Christmas.

It's the only strawberry jam I make now. Unless I need to make Jeninwa's booze!

I made this today, my first ever jam making attempt.

After reading the comments I blitzed sugar, used vanilla bean paste,  roughly chopped apples and strawberries. Cooked 30 mins 100 degrees followed by 10 mins varoma.

So happy with the result, absolutely delish.

Fussy DD loved it and had two strawberry jam sandwiches this afternoon and one for her lunch box tomorrow.

Will def make again

Had visitors two days ago and made a batch if this with scones, I added a little grated lemon zest and juice if half a lemon, didn't need the extra 10 mins on Varoma it was thick and yummy.
