Smoked Salmon Potato Salad with Peas and ZucchiniServes 4
Ingredients1Kg small potatoes, halved
1 cup frozen peas
2 zucchini
2 x 200g packets smoked salmon
½ red onion, finely chopped
1/3 cup chopped fresh chives
½ cup chopped, fresh parsley
salt and pepper
½ cup good mayonnaise
½ cup Greek yoghurt
PreparationPlace potatoes into Varoma, 500ml water into the bowl and cook Varoma, speed 4 for 20 minutes. Add peas in the last 5 minutes.
If not cooked add a little more time.
Use a vegetable peeler to slice zucchini lengthways into long, thin ribbons.
Place potatoes and peas, smoked salmon, torn into strips, onion, chives, and parsley into serving bowl.
Mix mayonnaise and yoghurt and fold through salad.
