Apricot chicken - risotto style

Hi everyone!
Am planning on making this today so have had a look to see if anyone has any tweaks, tips etc and couldn't find any for this dish. Have I missed it or is there nothing to change from the recipe book?
I always check on here first as there's so much good feedback about the recipes which then stops me making mistakes.

Hi JulieO, this was the first 'real' meal I cooked in my TMX back in Oct/Nov 08 and I wasn't keen on it at all. Made a note alongside it which reads 'a bit bland' but it was early days and I wasn't game to do a review on it back then. I've since worked out I am not a real risotto lover either but taste is important. I know my daughter added some chilli and bacon to add more flavour but once I am disappointed in a recipe, I don't usually do it again. Others are bound to have done it though so I'm sure you will get some responses here. I prefer the apricot chicken recipe I posted the other day over this one by miles. I converted it because I do like apricot chicken and was disappointed in the one in the ECB.

Thanks for the quick response Judy, this is what I wanted to get back. I must admit I've not made many risottos at all so thought I'd try this one, but I'm thinking twice now. Will have a look for the recipe you posted and see if I have all the ingredients and may make that instead. Thanks again.

I use this one at my demos instead of the mushroom and everyone loves it. I have no problems with the recipe, follow it exactly except that the amount of rice can be reduce to 250g. I just use parsley for the herbs as i dont like thyme.
We have this one quite regularly as a quick meal and it freezes well.

I think the chicken cooks for a bit too long in this recipe. Somebody on the forum (
) said to add the chicken in the last five minutes of cooking when making a chicken risotto. I've started doing that and it really makes the chicken a lot more tender.

Thanks for replying riv and Chelsea, maybe I should give it a go and only add chicken at the end and see what we think. I know everyone has different tastes so I won't know if it's a winner unless I make it. Thanks for your input, and Judy, I have copied your recipe into my file and will make that for sure in the coming couple of weeks.
I'm still getting to know my machine, and hope to be able to give my own input to recipes in the future too.

Thanks Chelsea and Judy. I agree about feedback, especially when we're newbies to this. Nothing worse than wasting ingredients (like my creme brulees today). Reading about what works and what doesn't is a big help.

I made this the other night and didn't like it at all.
Definately needs something else added to give it flavour. Very bland.
I did add the chicken in the last 5 minutes which worked the chicken was tender.
