Rice Salad
« on: December 11, 2015, 02:15:08 pm »
Hi,

I have had my thermie a couple of weeks and haven't used it much as I have been sick but now that I'm better would like to start using it more often.  I have been asked to bring a rice salad on Sunday (no nuts), I hate cooking rice and am looking for a fail proof recipe.

TIA

Lisa

Hi Lisa,

You will find cooking rice super easy with Chookie's recipe. It makes a generous quantity too.

The link is here.

Lisa, we like a curried rice salad. This year for Xmas I will be using a Cashew nut based Mayo, ( but see you want no nuts). Make the TMX Mayo with eggs. It is terrific, I use 1/2 rice Bran oil and 1/2 olive oil.
Uni has posted a recipe for cooking the eggs for the Mayo.
Nuts provide the crunch in rice salad, consider adding some celery and radish cubed by hand.
Let us know how you go.

Hi Lisa, welcome to the forum. Glad to hear you're over your illness and are now set to start enjoying your TMX like the rest of us.  I also love the recipe jeninwa linked to.

Hi Lisa and welcome. We love the yummy brown rice salad that Jen linked. It keeps well too and very nice without the nuts.
