Aquafaba Mayo

Bet you don't know what Aquafaba is.  I didn't until a couple of weeks ago.
It is the gooey liquid in a tin of Chick peas,  it can be whipped to form something that looks like and acts like egg white.
I converted to TMX, a recipe from Annabel Longbein for Mayo using Aquafaba. It makes a light Mayo, not as thick and rich as that made with egg, but quite acceptable as I usually thin my Mayo before I use it.

Place all ingredients into TMX bowl, with BUTTERFLY, and beat , 10 seconds , speed 4.

3 Tablespoons of Aquafaba, strained.
2 Tablespoons of white wine Vinegar, ( I used Apple Cider vinegar)
2 teaspoons of Dijon mustard
3/4 teaspoon of salt
1/4 teaspoon of white pepper
1 cup oil, ( I used 1/3 each of EVOO, 1/3 of Canola and 1/3 of Rice bran oil. )

Might give this a try, especially as it looks to make quite a small quantity.  What did you think of the taste?

Marina, it made a very nice dressing for a salad. You could add anything to it. For example Avacado, garlic, or curry powder, egg or use as a dressing for potato salad or coleslaw.
The taste depends on the quality of the ingredients.

I knew you could make meringue mixture from Aquafaba but not mayo Chookie.Very handy for people following a Vegan diet.

CC, good also for those who can't have eggs or nuts. Love the Cashew Mayo. 
Think you can also use the liquid from other canned beans. Haven't tried it yet.

Yes, Thermilover, I feel the same. The tin of Chickpeas that I used had liquid that I thought was a bit thinner than what I usually use.

Like CC, I had heard of being able to make meringue from it but not mayo.

Tonight I am going to try making pancakes using the Aquafaba in stead of eggs. Will see how it goes.
I am still using the Mayo and am very happy with it. I have read that you can add a little honey or maple syrup to sweeten it if you desire.

I have made another lot of Mayo using this recipe. Much the same but replaced 1 tablespoon of vinegar with 1 teaspoon of maple syrup.  I think I like this better as Mayo although the original recipe is excellent as a cold slaw dressing.

I also used a different brand of Chick peas. Woolworths low salt.

To be honest I was very skeptic about aquafaba until very recently.
Last week I cooked some chickpeas. I had some leftover cooking water. (I cook them without oil or salt)
I decided to try just out of curiosity. I couldn't believe my eyes!  :o It looked like whipped egg whites really!
I had some dark chocolate at home. I immediately melted it.
I mixed them gently, added a bit vanilla too.
I transferred the mixture into small cups. Served as mousse!
