Fruit and Nut Snack Bars

This is a fantastic muesli bar recipe, quite versatile  8)

Makes: 12 bars

INGREDIENTS

200g oats
100g dried fruit of choice
100g nuts of choice
40g shredded coconut
1 ripe banana
50g honey or maple syrup
2 eggs
2 tsp cinnamon
Topping extra's, optional  (eg seeds, cacao nibs, shredded coconut)

METHOD

Preheat oven 180° / 350°F, line a slice pan with baking paper

Place oats, fruit and nuts in Thermomix: 6 sec, speed 6 (or more depending on how large and hard your choice of dried fruit is)

Add banana: 3 sec, speed 5

Add remaining ingredients (except seeds), mix reverse, 20 sec, speed 3

Spread evenly into slice pan

Sprinkle with optional topping

Press down evenly and firmly

Bake 15-20 min until lightly golden

Cool in tray 15 min before slicing

NOTES

These bars freeze nicely and stay fresh in the fridge for approximately 1 week.

Thank you. I put several ideas to the family and they said something plain was better than jazzy. Family!!!
I'm finding it a good way to record just how much I do use my machines. They have both been busy this morning.

Thanks for sharing such a nice and healthy recipe I will definitely give it a try. This kind of healthy snack bars is the all time favorite snacks of mine and I use to keep searching on the Internet for many more bar recipes. Recently I came across an informative post which have healthy and easy to prepare snacks recipes which I am going to make today's snack from. Also, I would love to know more and more healthy recipes so keep sharing and eat healthy.
