How to alleviate burning sensation due to chillis
« on: September 08, 2008, 01:10:53 am »
Another tip from German TMX site:

Milk, yoghurt, bread, cooked rice, sugar or sweets help relieve burns is in the mouth from hot food.

They are more effective than water, because the sharp capsaicin - the substance causing the burning sensation from chili peppers - are not soluble in water and after a sip of water makes it burn even more.

My addition - the Chinese use "Arbutus Juice", also called Plum Juice for the same effect.  It is great for relieving the burning from chilli or Sichuan Peppers.

Relating to how to reduce the heat/potency of the chili:  A very rough translation  ;)  ???

The capsaicin-producing glands sit mainly in the inside walls of the chili.  By removing the pith and inside layer together with the seeds, the fruit is slightly milder.

Wear gloves when removing the seeds or wash your hands very thoroughly afterwards. It is very uncomfortable, when Chili gets on the face or gets in the eyes!  Using the Thermomix to chop your chili reduces the possibilities of getting burns from the chili.

Those with no whole chili may instead use chili powder or cayenne pepper.

(Hopefully that's what they were saying)
