HELP WITH GARLIC RICE RECIPE!
« on: October 02, 2009, 10:49:07 am »
Hi All

I made garlic rice today - used arborio rice (which I now think was the wrong type of rice) since it took forever to cook and I had to add more water! :-\

Which rice should I have used?  Is short grained rice = arborio rice?

Kids still ate the rice but didn't taste very garlicky as I had added more water.

Thanks,

SYLVIA - MELBOURNE :)

Hi Brazen

I actually only used 20 ml of oil.

I pretty well use the full amount of oil with the 800mls water but have never had the problem of it not cooking in the time frame given.  Are you stirring it every 3-4 minutes as suggested Sylvia.  This recipe is one where you need to hang around to do this bit - I stir it at least 3 times during the 13 minute cooking time. It has never failed me and I use arborio rice also.

I can say I made it, but feel terrible because the judges including myself didn't like it. Never made it since, and stuck to normal rice.

I use boiling water to begin with Sylvia, wonder if this is the problem with yours. If you start with cold water then I'm sure it wouldn't cook in 13 minutes.

I used 30g of olive oil (and 4 garlic cloves  :o) tonight and we loved it.  I used boiling water to cut out the 7 minutes of water heating time.  It cooked beautifully in the 13 minutes with 3 "stirs" along the way.  :)

I usually use basmati and oftne forget to stir it and it still seems ok and cooks in 13 minutes. Must be luck.
