Onion and Bacon Muffins

This is only my second post on this site but I have been lurking and making good use of my Thermomix - particularly at the weekend.

My family love savoury muffins so I made this recipe and thought I would share it with you.

100 grams bacon
1 onion
50 grams olive oil
50 grams butter
2.5 cups of self-raising flour
1 cup milk
2 eggs
100 grams Parmesan (plus a little extra for the top)
salt and pepper
1/2 tsp baking powder
a few drops of Tabasco (optional)

Put onion and bacon in TM and chop for 3 seconds on 5.  Add 50g olive oil and cook for 3 mins, 100, speed 1.

Add all other ingredients and process for 40 seconds on speed 4.

Put into muffin trays, top with Parmesan and cook for 20 - 25 minutes on 180 degrees c

Who can't resist muffins, whether sweet or savoury? Well me for a start.Lovely looking recipe especially with the hidden kick of Tabasco.

Isi, by looking at the recipe I think it will be 2 1/2 cups of Self Raising Flour - each cup holds 250ml - I use grams and that would equal to 375g - hope this helps you out

Have made these today and will eat them tonight with our Pumpkin soup. They smelt and looked fabulous when they came out of the oven. Thank Hebe
