Help.. Gluggy Risotto
« on: October 21, 2009, 08:02:39 am »
Okay... I have had my thermomix for 4 days.... and have cooked about 30 things... LOL.
Most 100% successful and loving it however - the Risotto in the recipie book (Mushroom one) was like glue!  I used the correct rice etc...
Any tips on non gluggy risotto?

Loving my machine... and have Bolognaise cooking as we speak!

My first mushroom risotto didn't turn out either, so don't be too hard on yourself.  A few weeks later I tried it again, and it was beautiful!

I don't use the butterfly when I make mine.  Was it all blended (maybe not on reverse - I've done that trick)?  Or too much liquid?  I find it's good to let it sit for a few minutes before serving.

Thanks for that.
I am not sure what I did....
Might leave it a week or two as you suggest and then give it another go.

Cheers.

there are a number of recipes on here but i think the most successful have less rice in them to the water ratio. perhaps have a look ehre http://www.forumthermomix.com/index.php?topic=1592.0

what brand of arborio rice did you use, i find the supermarket stuff is not as long a grain as proper italian arborio rice, so needs less liquid and less cooking time, see if you can get really good arborio rice
ive made a LOT of rissotto, i find the best proportion is 380g rice, 100g wine, 900 water and 17mins cooking time - standing time 5mins = perfect risotto!
and I use the butterfly on reverse speed soft

I also hated this the first time I made it - now use much less rice. Had it at another demo and was a different (better) brand of rice and was even better. Would never make this by choice as I find the mushroom risotto rather bland but will try some of the other recipes. I find the same with all the pasta recipes - much too much pasta to liquid ratio.

Thanks very much for that.
I know that some recipies will need a little squeaking to make them right...

Cheers.

As others have said - varies with rice types, but for me less rice and less time was the key.  Keep trying.
