Mango, Passionfruit and Lime Jam
Ingredients
500g of frozen mango pieces
125ml lime juice
660g white sugar (approx.)
80ml passionfruit pulp
finely grated rind of 2 limes
Preparation
Place mango and lime juice into bowl and cook at 100*, speed 1. reverse until it is tender.
Measure the mango and allow 3/4 cup of sugar for each 1 cup of fruit.
Add mango and sugar, with passionfruit pulp back into bowl.
Cook approx. 20 minutes on 100*.
Test using a cold sauce (previously placed in freezer) using usual jam setting technique. If it isn't cooked; cook at Varoma with basket on the top for increments of 5 minutes.
If cooked place into hot, sterilised jars and seal. I usually turn my upside down for 3-4 minutes to try and make the seal better.
