It certainly did lighten up for you chrissa and proved a success after all your doubts.  I don't know about your theory of it being the thickened cream which caused it to be 'gluggy' but it pays to keep an eye on it.  I think this is one of those desserts that, once you've made it for the first time, you know what to expect next time.  I only use thickened cream in anything, never pouring cream.

Thanks Judy.  i took some to work today and it was a huge hit.

You're right about knowing what to expect next time.  I'll definitely be making this again.  Work loved the left overs :D

made this yesterday as i got a huge bag of bananas for $1 and DD has been asking for it for a while. I followed the recipe exactly and it was done in no time. we found the pastry a little dry so next time will use a biscuit base as others have but will use chocolate biscuits as i think the subtle chocolate flavour on the bottom adds to the overall taste.

We all had a small piece and DD had two but I cut off about 1/3 and gave to DD's boyfriend to take home as his family are much bigger eaters than us. I was going to give them about half but both DD and DH complained, so definitely a hit here. I'm not a desert person so my one little piece last night was enough for me.
