Thanks everyone :) I'm going to have another go at them soon, to try to perfect the bubbles! This recipe is very similar (with nearly exact wording) to Thermomixer's recipe in the In the Mix book. Do you think it might be worth linking them (if not already!)?

Jeff Brady aka Thermomixer has a few recipes in the first In the Mix book Jamberie.  I've added the crumpets to the list of reviews and linked it back to this recipe and comments here.

Jam,  love your crumpets.  I have a few goes over the years.  Metal rings are better than the large plastic ones, but hard to find.  Look at adjusting the temperature of your frying pan for the bubbles.  I also think that the carb looses its kick after a while.
