Help with whipped Cream

Dear members,

I have received a question from one of our members in our Facebook Channel.

Our dear member would like to know how come sometimes whipped cream does not rise.

Please help me out on this one

Is the cream not cold when placed in teh TMX bowl?

Is the speed that the cream is being whipped too low - best on at least 3, or 4

Is there a problem with the butterfly - lost some wings ?

Is it being beaten on reverse ?  Shouldn't be that much of a problem

Not sure - may need to find out how they are doing it now and what type of cream - 18%, 35%  Single, double?

The freshness of the cream is also part of the science of whipping cream, believe it or not? The fresher the cream, the longer it takes to whip...and the MC must be OFF.
