Lime Coconut Panna Cotta:

This is really delicious. I developed the recipe myself after looking through about 5 different recipes and not finding one that I liked. None had coconut cream or coconut milk in them. I wanted it to be a coconut panna cotta because I was serving it after Indian food. The Kaffir Lime in it is lovely, especially with the flavour of lime from the rind and juice.
If you don't want to bother with the sauces, just serve with mango and kiwifruit sliced up on the plate.

Thanks MJ.  We made coconut pannacottas last week at the restaurant.  Like the idea of infusing kaffir lime leaves/rind.  Was looking at all the leaves this morning and wondering who i could give them to.  Don't think that a few pannacottas will make a dent.

Hi

I made this yesterday and it tasted great - but it was really, really rubbery - so much so I couldn't eat it. 

What strength gelatine leaves did you use?  Maybe mine were too strong!

Sounds like different strength leaves.  To me 2 leaves of titanium strength should be enough for that amount of liquid ?

That would sound about right, as the 4 made it a bit like a rubber bullet!!  The flavour was great though, just too chewy!!

Oh, sorry it didn't work for you! I can't remember the brand of leaves that I use, but they're really thin. Hopefully, if you reduce to half quantity it will be less rubbery!

I googled about gelatine leaves and there are so many in different strengths it's all a bit of a puzzle...
