Made this tonight to accompany Italian meatballs:

180g red capsicum (de-seeded and quartered)
1 zucchini (120g) chopped
2 cloves garlic
1 onion quartered
15-18 basil leaves

1 tin diced tomatoes
2 tsp sugar
cracked pepper
1 tsp TM stock
Grate the parmesan, and set aside.
Add the capsicum, zucchini, onion, garlic, basil leaves, and chop 5 seconds/speed 7.
Scrape down jug.
Add 20g olive oil and saute for 5 minutes/varoma temp./
speed 1
Add tinned tomato, sugar, TM stock and pepper.
Cook a futher 5 minutes/100c/speed 1.
Place in thermoserve, and stir in grated parmesan cheese.
