Dr Seuss Green Eggs (& Ham)

I found this fantastic recipe last night while cruising the net, and happened to have the ingredients that needed to be used up.  This if the first time that my 4.5 year old has eaten frittata, or anything like scrambled egg etc.

We made a really big deal about how Dr Seuss had made it.  And it worked - she gobbled it up.  Next time I'll add some ham or bacon, or would be a great side dish with grilled sausages, mushrooms etc for a brunch or breakfast event.

And DH liked it too, and has asked me to make it for St Patrick's Day since it is sooooo green.

and called "Yard Egg Blender Frittata" by author Liesa Cole.  I've adapted slightly.

Serves: 4-6

Ingredients:
8 eggs
3 cloves peeled garlic
1/3 medium sweet onion
1/3 bag fresh baby spinach (2-3 cups packed)
sea salt
fresh cracked pepper
dash cayenne
½ block cream cheese (softened)
handful fresh basil, plus a sprig or two more for garnish
1 ripe tomato
1 cup fresh grated cheddar cheese

Grate cheese and set aside.

Seriously, toss EVERYTHING else, except the tomato in the  *:.  Whir until well blended and fluffy - spd 9 about 20 secs.  Pour mixture into a well oiled baking dish.  It will rise and puff up, so make sure it's not too full.  Could cook in a quiche dish for a nice shape.

Bake at 200 for approx. 15 minutes.

When frittata begins to set, remove from oven.

Sprinkle liberally with cheese.  Arrange tomato slices and thin slices of onion.  Sprinkle on the rest of the cheese.

Crack a little pepper on top.  Finish in oven until firm.

Serve to adoring toddlers explaining that it's specially made for them by Dr Seuss.  Encourage eating with lots of 'MMM, this is delicious" and they will quickly copy.

Next time I might try cooking in the varoma, but it won't have the nice crunchy edge from the oven.

HI Cathy79, sounds like a great lunch recipe for the grandkids. Maybe you should place this in the breakfast competition...  or do they have to be your very own recipes. Sounds like a  Sunday morning brunch with friends type recipe. Will be trying this very soon.

Great work - it is like a couple of recipes on here that had the spinach and egg mix, but much simpler.

I can't recall which recipes they were - but know I made one to help somebody with their conversion - I took pictures, but never got round to posting.  Think they should probably just use this method.

Looks similar to mine.  Except the spinach in mine was much more blended and just changed the colour.  So wasn't at all "stringy".  The texture was fantastic, especially for kids who are picky about texture.

Think that it was Snoozie's recipe for carrot and spinach pie that I was trying to make.  But this is "How Bloody Eeeeasy Was THAT???"  and if it pleases the food critics - hey, even better.

When DD was in Year one her teacher did green eggs and ham for all the children. (It was a cooking activity) They had ham and the eggs were coloured green as they were put into the skillet. They had all been very enthusiastic at first but when they saw the green eggs they weren't too sure.
May all dairy items in your fridge be of questionable vintage.

That's fantastic!  It's also nice cold, so could definitely go in the lunch box.

Made this again tonight, with a couple of ingredient changes to suit what I had available.  Used silverbeet instead of baby spinach - used one large leaf, without the stalk as I thought that might be stringy.  Also didn't have any cream cheese so tried with some cheddar cheese instead - 100g at the most.  Texture was still great, probably slightly stronger spinach and egg flavour as there was much less cheese.  Still delicious, and both toddlers still devoured it ravenously.
