Multigrain Loaf - Help?
« on: June 19, 2011, 12:41:37 pm »
Hi Everyone,
I have just bought some Laucke Multigrain bread mix and would like to make a lmultigrain oaf using the TMX.
Can anyone point me in the right direction.  I have had a quick look but have not been able to find anything.
Thanks.

Just follow the directions for water and yeast that are on the packet. Put all in  *: , lock lid and set to  :: for about 5 minutes.
Allow to rise in  *: or place in another greased bowl to rise. Place in a warm place.
Tip out and knead lightly by hand. Shape and place in to bread tin.
Allow to rise in a warm place once more.
Preheat oven to 220C and bake for 20 - 30 minutes depending on tin.

I think you can use any of the bread recipes but you might find you would need to add a little more water as the grains tend to soak up the water. I haven't made the multi grain bread in the TM but used to in the bread maker, although I used to use half white and half multi grain or wholemeal so as the kids would still eat it. Someone else would definitely know more about the bread making process than me though as I consider my self still a newbie with the TM compared to others.

This may be defeating the purpose seeing as you already have a multigrain mix, but I love this bread recipe from Helene in Canada (see www.superkitchenmachine.com).  Sorry, everyone, I haven't had a chance to read through and absorb the directions in the "how to include a URL" thread, so I'm doing this the beginners way!  Anyway, this is Helene's dark rustic bread loaf recipe and it is very nice.  http://www.superkitchenmachine.com/2009/3000/dark-thermomix-seed-bread-recipe.html

Helene's loaf is really lovely. It's her take on the 5 seed bread.

I actually use way more water than Laucke recommend for their mixes. My standard ratio is 3 parts water to 5 parts flour, so a 600g bag of mix needs 360g water.

I use my bread-maker to make our daily bread and quite often make a bread using 450g Laucke bread flour + 200g Laucke multigrain + 380ml water + a dash of olive oil + a pinch salt + 1 tsp yeast.  This makes a bread that's not to heavy but still has some texture. And it works every single time! ;)
Like you cgonsalv I'm a newbie, so I haven't tried to make this bread in TMX, but I guess you could tweak the quantities to not overload your TMX (slightly less flour & water?).  Have a go!

Chris, MJ's method is spot on,.  I would use the basic proportions of 500 flour, 300water and 2teaspoons yeast.  don't add salt or sugar as these are already included in the  Laucke  premixed. Knead for 4mins.  After 3mins,stick your finger in the TMX hole and if the dough doesN't stick to your finger ,  but is a nice soft dough, continue for another min. Continue as MJ suggests.  Good luck, let us know how you go.

Thank you all, I will give it a go this weekend - I can't imagine what I would do without this forum.
Life and work have intruded on my TM fun, so have not had a chance to do it yet.
Will keep you all posted.
