Paul's pide for lamb patties & yoghurt sauce

Pide Bread

Ingredients:

225g bread flour
1 tsp salt
1 tsp dried yeast
140ml warm water
2 tsp extra virgin olive oil

Method:

Knead everything together  :: for 3-4 minutes
Let proof for 1 hour covered in a warm place
Knock back and shape - either 6 round balls for pittas or 2 larger balls for pide
Sprinkle with flour and leave for 5 minutes covered
Roll out into 6 pittas or 2 long turkish pides
Bake at 230 C for 4-6 minutes until puffed up
Take them out before they are brown and wrap in a tea towel to keep them soft

Hints/Tips:

I often make these to accompany barbecued lamb patties (see the recipe HERE) I got from a Weber book - anyone interested in that recipe?  The pides are nice toasted the next day

I made these on the weekend and was very pleased with the result.
It is a lovely dough - very smooth - and the bread was satisfyingly airy inside.
I suggest sprinkling them with sesame or nigella seeds before baking and next time I will bake them on a preheated pizza stone, too.

Nigella seeds would give them a 'turkish' flavour, yum!
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I made these pitta's for dinner tonight.



The mixture made 4 smaller pittas, and 1 large one.
Next time I think I may double the mix.
They puffed up lovely, and then left them to cool between two tea towels as directed.
I was happy with the results.
Very satisfying to make your own, instead of purchasing them.

Tonight I lightly toasted them in a dry pan, then topped them with lettuce, slow cooked mexican beef, tomato salsa and sour cream.

.........EAT CAKE!
