Recipe Name: Mexican Vegetarian Stack

Book Name: A Taste of Vegetarian

Review:  We really loved this and will be making it again and again.  The green cheese topping looked a little strange (cheese chopped with parsley, spring onions and garlic), but was delicious.  I used Quirky Jo's spelt tortillas in this dish and they were yummy.  I really get a buzz out of cooking Mexican from scratch!

Tweaking details: Next time I would add in a tin of diced tomatoes (well drained) and just half of the de-seeded chilli as it was a little too hot for our boys.

Score: 4 (out of 5*)

Nice to see a review from this book Chelsea.  Do you mean you would add another can of tomatoes into the recipe, there is already one in there.

There isn't a can of tomatoes listed in my book JD (I just got my DH to check again in case I was going crazy  ;)).  Just tomato paste.  Perhaps your book is a newer version?  ???

Just checked my book, no tomatoes in mine either. Mine is a 2009 version so will make a note in there to add it. Thanks Chelsea  :)

 My book is a 2009 too Kathryn and the tin of tomatoes is listed after the tomato paste in the right hand side ingredients list. In the method, it says 'add kidney beans, tomato paste, tomatoes and seasonings'.  I thought I was going crazy there for a minute but it is definitely in there.

Mine was published in Feb 2009.  Yours must be a later edition JD.  :)

It must b that you have the later 2009 version JD , mine has a tin of kidney beans, 70 g tomato paste and then onto the spices etc. This is where this forum is such a benefit when changes have been made. Thanks JD for putting the method in too, never thought about that so will add that in my book now as well.  :D :D

Yes you are right girls, July 2009.  Wonder how much better it is going to taste with the addition of the can of tomatoes Chelsea - you loved it without them and they would certainly add more oomph to the dish I would think. Be interesting to read your next review on this one.  ;) ;)

It was lovely and tasty, but just needed a little more moisture and "freshness" that tomatoes would bring.  :)
