Made these today, this time I used my muffin trays. I spay oiled the base of each muffin bottom, I am not sure why I had trouble getting them out. I lost a few bottoms.

Made these for school lunches.

Have eaten 2 already ??? Not  sure what happened there, I think it started with the bottom :-))

If I don't line my muffin pans Hally, I often lose my bottom too ;D  I now cut a circle of baking paper out and put that in the bottom, easy to run a knife around the sides if they are sticking.

I love these kinds of recipes. I often add grated carrots, corn, onion and some sun dried tomatoes to mine. You can also swap bacon for left over chicken from a roast. Just turbo the chicken to break it up abit.

'bacon slice' - I love it!!

I have just been playing around with this recipe trying to find *something* to replace the cheese with to make a dairy free option (for DD2) - today I tried boiled potato and 1/2C rice milk in place of the cheese, and while it didn't really taste like the original zucchini slice, it was very nice, more like a bacon and egg pie taste, but she was unimpressed  :-\ - guess i will just have to keep trying!

DG - loving the idea of the leftover chicken, will have to try that one!!

Anything that has bacon in it is called " bacon ......." keeps cp happy & loves anything to do with baco :D

DS has 2 wobbly front teeth, the ones next to the 2 large front teeth. He cant chew, bless.....
So I made another batch of these, this time added cabbage as i didnt  have enough zuchini, also threw some corn in & extra bacon. They look & smell yum

I made this tonight for vego son.  How easy!!  Put in some corn, rather than bacon, however will make again for carnivores because I think bacon would make it extra tasty!  I'm also thinking might add sun dried tomatoes as Dizzy Girl suggests or even some umami paste to add more flavour to a vego version.  Thanks for sharing this super easy dish!

I make this all the time. Made some yesterday, ds loves it. I chop the bacon myself  and stir it through.

Its great & so easy.

silicon moulds are easy to get slice/muffins out.

I spray with oil first thiugh

I was going to make mums zucchini slice then realised it was the same as yours Astarra. Thanks for converting, it's delicious, I followed the recipe exactly. Mine took 40mins to cook. Here's the weights for those who don't use measuring cups anymore:
130g grated cheese
150g self raising flour

I made this today and made it into two small slices.  One for the freezer and one to eat today.  I added carrots, parsley and some herbs to mine.  A lovely easy and tasty recipe.
