Roasted Red Capsicum Cream Cheese Dip

Name of Recipe: Roasted Red Capsicum Cream Cheese Dip from Polish cooking class in Adelaide 5/5/10
Ingredients:
2 large red capsicums
1/2 bunch dill
3 shallots (not spring onions) trimmed and peeled.
1 clove garlic
1 tbspn extra virgin olive oil
Zest of 1 lemon
200g cream cheese, cubed
60g sour cream
1/2 tsp smoked paprika (you can use sweet paprika if you prefer)
S & P to taste

Preparation:
Roast capsicums in oven for 15 minutes at 200oC.  Place in a covered plastic bowl and allow to 'sweat' for a few minutes.  Peel, quarter and de-seed.  Set aside.
Place dill in TM bowl and chop for 2 seconds/speed 7. Set aside.
Without washing TM bowl, chop shallots and garlic for 3-4 seconds/speed 7.  Add oil and cook for 2 minutes/100oC/speed 1.
Add roasted capsicums to the shallots and garlic and blend for 8 seconds/speed 7.
Add the lemon zest, cream cheese, sour cream, paprika, S & P and mix for 1 minute/speed 5.
Add dill and mix through for 5 seconds on speed 5.

Apart from a dip this would be nice as a jacket potato topping or warmed as a sauce over chicken.

I asked the grocer at Woolies what one shallot is exactly - is it one small piece like a small garlic clove, or is it the whole thing that looks like an onion and encloses a couple of 'cloves'. He didn't know. So the first person to answer this question can win the title of the Smartest Person in the World for today...any takers  ;D

(In general, when a recipe calls for a shallot, they are referring to an individual "clove" of shallot and not an entire head).

Although in this recipe they used the little purple skinned shallot  (about the size of a 50 c piece) I can't see why you can't use a bunch of spring onions instead, especially if you have them growing.  The shallot is a sweeter onion.

Thanks JD - for those who don't want to roast the capsicums, Always Fresh have some piquillo peppers and roasted red peppers which could be substituted.
