Chicken, Feta & Spinach Triangles

Name of Recipe: Chicken, Feta & Spinach Triangles
Number of People: 4 serves
Ingredients:
1 clove garlic
1 onion quartered
20g olive oil
2 chicken breasts or approx 400g chicken thighs, 2cm cubed
1 bunch silver beet, washed and cut from stem
250g feta cheese
8 sheets puff pastry
egg/milk to brush pastry with

Preparation:
Preheat oven to 220 degrees C.
Place chicken in Varoma dish, and spinach in Varoma tray & place 1 L water in bowl.
Steam 10-15min /varoma temp/speed2
Stir chicken half way through, and to check when cooked.
Place chicken in a big bowl when cooked.
Rinse spinach and squeeze out excess water.
Remove water from TMX bowl, and place spinach in. Chop 3 sec/speed 5
Place spinach in bowl with chicken.
Place garlic and onion in bowl, chop 5 sec/speed 5
Add oil, sauté 2 min/ 100 deg/speed 1
Add feta cheese 2 sec/speed 9
Place feta & onion mixture to chicken & spinach mixture, and stir to combine.
Cut pastry sheets into quarters.
Place 2-3 heaped spoonfuls into pastry and fold sides over to make a triangle.
Place triangles on a greased oven pan and brush with egg/milk.
Cook20-30 mins until golden brown.
Serve with a salad or steamed vegies.

Ah ha, you worked the recipe out Bubbles - thanks for the time spent on this one, they sound delicious.

Haha you have a good memory JD!! Yes, there have been a number of 'trial & errors' but I am happy I finally got there. For someone who wasn't a very confident cook pre-TMX, I never thought I would be converting my own recipes, so I am happy with myself :) Oh and also, of course it tastes a lot better than it did pre-TMX :D

You sound just like me in the beginning - I had trouble following a recipe let alone try and convert one of my favourites but life is full of suprises and isn't it a nice feeling when you start converting your own recipes.

Thanks for the recipe Bubbles - I'm going to try this on the weekend. 

Can I ask though, when you put the water in the Varoma, is it cold water or hot water ?

Hi Chrissa, Sorry I missed your post, not sure what happened :-\
I think I put hot water in, but I just kept stirring the chicken pieces every now and then to make sure they were cooking evenly and cut one up at the end to make sure it was cooked (hence my 10-15 min guide, I guess it depends on how big your chicken pieces are)

That's ok Bubbles. I had plenty on my to do list so I haven't made it yet. I used the chicken to make soup.
 
I'm hoping to give this a go tomorrow and I'll let you know how it goes
