Turkish Apple Rolls (Elmali Kurabiye)

(Makes 12)

Ingredients:
Dough:
300g plain flour
80g icing sugar
200g butter, room temperature
60g plain yoghurt

Filling:
4 apples
30g butter
1 tsp cinnamon
45g sultanas (or chopped walnuts or hazelnuts)

Extra icing sugar to dust.

Method:
Preheat oven to 160 degrees.
To make the dough:
If making icing sugar, put raw sugar + 20g more (reserve for dusting at the end)
in bowl for 10-15 secs, Speed 9.
Place all ingredients in the TM bowl and mix for 20 secs, Speed 5.
Wrap in plastic, and leave for 20 minutes in fridge.
To make the filling:
Peel and dice the apples. Melt butter in TM bowl for 1 minute, Speed 4.
Add apple, cinnamon and sultanas. Cook for 10 minutes, Speed 4, 80 degrees.

Divide into two, and roll out the dough very thin (about 3 sheets of filo pastry thickness).
Cut a circle of 30cm diameter using a plate for a template, and divide into six triangles (like you cut a pizza)
Put a tablespoon of filling on the edge of each triangle, fold over at the sides to encase the apple, and roll up (pointed end last).
Place rolls on a nonstick baking tray and bake for 24-30 minutes.
Leave to cool then sprinkle with icing sugar.

Have never made these before today so I welcome your feedback for improvement

These look lovely. I was wondering what to have for dessert tonight. I'm moving my way through a large box of apples I was given.

CP 63 I have just made the filling for these and have a couple of queries.
Is the apple mix supposed to be quite liquidy?
Is it all 'smooshed' up? That is do the sultanas etc get all mashed in with the apple? I didn't know if I should cook the apple on reverse or not. (I didn't)

It tastes delightful. Just my thing, not too sweet. I will make the pastry and proceed.

These are now out of the oven. They are not very attractive for a variety of reasons, mainly because I can't cut a circle into 6 even pieces. BUT the taste is really wonderful and I will be making them again.
I had quite a bit of apple mix left over. Next time I think I'll thicken it when I cook it. Most of mine burst, but who really cares as the taste is so good.

CreamPuff I love apple cookies. It's been ages that I don't make them anymore. I cant find my recipe.

I didn't adapt it to Thermomix so I am gonna talk traditional way

About filling... I don't use butter or oil. (It's not often used) You cook diced or grated apple with sugar for 10-15 minutes medium-low heat. After cooked, you add cinnamon and walnuts and mix them. There are some variations with sultanas but we usually use apple, sugar, cinnamon and walnuts only. You fill the cookies after the filling cools down

About shape.. There are 3 common ways of this gender
First is just like apple pie or tart

Cookie1, your cookies look very nice as well.  ;) Did you also sprinkle with some icing sugar?

After baked and cooled down, we always sprinkle with icing sugar.
By the way the filling shouldn't be very liquid as you can see in the pictures above

Yes farfallina I did sprinkle with some icing sugar. I had just taken them out of the oven when I took the photo, before the family tucked in.
I think my apples may have been too juicy or something. Next time I will thicken the apple puree, or leave the apples in small chunks. The taste was really lovely.

glad you tried them cookie - yours looked better than mine did. the recipe i took it from was not very explanatory in how to prepare them , so afterwards i looked up some pics on websites to see better for my posting (should have done that before i started cooking). thanks farfallina for your help, and i am going to try them again with no butter and cutting the 'pizza shape' into 8 rather than 6 pieces. (the little pasty shape looks easy) thanks for both your help - its great to try some international food recipes. these are easier than making an apple pie, and much nicer with the smaller portion size.

Good work CP63 & cookie1 - well done on combining forces - especially when we have a genuine Turkey  ;)

Great to have your input farfallina - reminds me of some of my efforts with foreign food & even my very first pavlova - that was more like a meringue.  So embarrassed when my teacher explained that it should be soft in the centre.
