Creamy Currant Muffins

Hello

Well I looooove Currants and get so upset because they are so expensive on the market.
However there are small extravagances we can commit and this one has such a result - mhhhhhhhh - really worth it! I found this at http://www.wunderkessel.de/
The texture of the fantastic base - the taste so characteristic of Gooseberry - with that coverage to tie it all together - uiuiuiui.
Here it goes:

Recipe Name:
CREAMY CURRANT MUFFINS

 

125 grams of butter
125 grams Sugar
1 packet of vanilla sugar
1 Pinch of Salt ..................................... Speed 3 - 3 minutes
2 eggs ................................................Speed 3 (one after the other)
175 grams of flour
1 package vanilla pudding  - (remove a tablespoon of the powder and put aside for the Final Cream)
1 teaspoon full of baking Powder ......................... Speed 3 - 2 minutes
The dough must be thoroughly mixed and smooth.

Place a soup spoon full into well greased Muffin forms.

200 grams of Currant  (I always put two packages from the supermarket that gives 250gr.)
Distribute over the dough.

Cream:
1 egg
50 grams Sugar
1 package of cream fraiche
a tablespoon of vanilla pudding previously reserved
Mix all these ingredients in a small bowl and pour evenly over the currants!
Put in the preheated oven for 25 minutes - 180 degrees!

Our packs of vanilla pudding are 22 grams. (at the backside it says for 500ml milk!)
The packaging of Creme fraiche is 200 grams.

CC - Found some red currants when I was shopping.They taste delicious, thank you Isi. I made up 1/4 recipe of the vanilla pudding mix I found on the web http://www.celtnet.org.uk/recipes/miscellaneous/fetch-recipe.php?rid=misc-vanilla-pudding-mix.  I used 25 g of the mix in the recipe.

They look wonderful Isi. Just a couple of questions; what is the weight of the vanilla pudding and the size of the cream fraiche?I have never used vanilla pudding before but have found how to make up the dry mix and I could then weigh it out.

Hello and thank you :)

It's funny that I never use this powder to make proper Pudding  but just  to supplement other Recipes :D - lol!

Oh yum Isi. I think my bathroom scales are broken-they keep going UP on a regular basis.

Here we call small dried grapes currants. I THINK your yummy muffins use what we call red currants. Who cares really. They look so tasty. I think I may be wrong here-someone correct me please?
May all dairy items in your fridge be of questionable vintage.

Another lovely recipe isi, thanks for that.  Don't think you see these fresh red currants very often but I'm sure market places would have them when they are available.

Thanks Cornish Cream for the link to the vanilla pudding mix too.  Had a terrible job trying to print it off so ended up writing it out as it may come in handy.

I've seen them round CP63, but only when they are in season. I'm not sure when that is, much the same as raspberries etc I think. I don't think frozen would be as good. :-*

Yum.  Thanks Isi. Yes, we call them red currants and they are usually available (at a big price) around Christmas here in Australia.  They are great, but as everybody wants berries and currants at Christmas, you have to pay.

Thanks Isi for this recipe in particular.  We grow Red,  Black and White currants and I usually use them for jam.  It seems such a waste.   Now I will make some of your lovely cakes with them.   I will have to wait,  for as Thermomixer says they ripen about Xmas time.  Thermomixer thanks for the link,  but I refuse to pay for anything that I can grow.   I will have to wait. ( Thought bubble),   may have some in the freezer ;D ;D ;D

Hi :)

This fruit has a very special flavor!
For those who like it really is a waste to use it just to make jam!
