Poppy Seed and Walnut Bread (with photo)

I've adapted this from a Turkish bread recipe

I hope you like it  ;)




Poppy Seed and Walnut Bread
Ingredients

Dough

200g milk
200g water
20g fresh yeast
10g sugar
1 egg white
700g flour
5g salt

Filling
100g walnuts
100g poppy seeds
150g EVO

Top
1 egg yolk
1 tbsp yogurt

Preparation:


    * Put milk and water in TM bowl and warm for 1.5 minutes at 37°C on Speed 1
    * Add yeast and mix for 4 seconds on Speed 4
    * Add sugar and egg white. Sift in flour and add salt. Knead for 5 minutes
    * Put dough in a bowl and cover with plastic film. Let it rise for 1 hour

    * Chop walnuts for 10 seconds on Speed 6
    * Add poppy seeds and EVO. Mix for 10 seconds on Speed 3

    * Cover oven tray with wax paper. Brush it a little bit of EVO
    * After risen, divide the dough into 8 pieces. Sprinkle some flour on the surface. Roll each piece with rolling pin approx.17x27cm
    * Spread the sauce over. Start rolling from the long end, rolling into a log shape. Give it a spiral shape
    * Place the breads on oven tray. Let them rise for another 30 minutes

    * Beat egg yolk with yogurt. Brush it on the breads
    * Bake it in preheated oven at 170°C for 40-45 minutes

Another great dish.  Thanks farfallina - a bit like a kugelhopf recipe that I used to make years ago - I love the poppy seeds and walnuts.  I used to also have some dark chocolate mixed in too  ;) ;) ;)

farfallina, thanks for posting this recipe.  I had some problems with the recipe as I didn't have any poppy seeds.   For the filling I mixed together,  walnuts, chocolate,                crasins, ground almonds and the EVO.   I also ended up with very large rolls/scrolls.   Next time I will make 12.  What I love about this recipe is the Dough.   Very suited to making any type of scroll,  and I will definately be making this again.   ;D

farfallina, i think these would be very tasty and will try and make them tomorrow before i go out.

can you have a look at a recipe i posted and let me know if i can improve it in any way? i have never made Elmali Kurabiye before and the recipe was from the newspaper and I had to guess regarding preparing the triangles and rolling up. i think that the apple can be pureed somewhat a bit more, and i found that it is often grated prior to cooking? i look forward to your expert opinion  :D

Farfallina,  these were delicious with the modifications,   also cut in half and toasted for breakfast.   I will certainly try your original version when I buy the poppy seeds.  Thanks again

I had them for breakfast too when I cooked them
Using poppy seed as an ingredient to put inside will give a particular taste. It's not like when you sprinkle a little poppy seeds
You will be actually tasting them. It is a specialty. Some like a lot some might not. We do love it. I just wanted to make it clear when you try next time. Since you loved your version, maybe you should do the same way. You could fill 2 rolls with poppy seed to try.  ;)
