Fennel Soup (with photo)

Since it is soup season over there I post you another one :)

It is very easy to do and has such a delicate taste
I hope you like it


Fennel Soup:

Ingredients:
600g fennel, chopped into pieces
200g milk
350g water
30g butter
30g cornstarch
Salt
Nutmeg
Black pepper
Fennel leaves to decorate

Preparation:

    Put fennel in TM Bowl and chop for 10 - 15 seconds on Speed 4-5.
    Add milk and water. Cook for 20 minutes at 90°C on Speed 1.
    Add butter, nutmeg, salt, pepper and cornstarch. Cook for 7 minutes at 100°C on Speed 3-4.
    Blend for 2 minutes on Speed 9.
    Serve into the plates and decorate with some fennel leaves, sprinkle with black pepper if you like

Thanks farfallina.  Fennel has always been a favourite veg for me.  I like it with tomato and baked with breadcrumbs, cheese. lemon rind & garlic mix on top. 

Fennel used to very cheap here as only Italians & Greeks ate it - now it is very trendy & so it is more expensive  :(

Fennel is not that popular neither in Turkey. As a matter of fact I started eating it in Italy.
At first I found the taste of it very strange :-\
Now instead I love it   ;)

Here is a salad recipe with fennel:

Chop fennel into thin slices. Chop orange. Add pitted black olives and walnuts. As dressing add EVO, balsamic vinegar and salt. Mix all together. I go crazy for this salad!!  :o

Mmmm....I love fennel! I'm growing it in my garden, so look forward to making this when they're ready to pick.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

You cultivate your own fennel! Wow!  :o
Our apartment has a very tiny small piece of land as every apartment in our building
I don't even know how big exactly, around 3-5m2 I guess
I always want to do something with it but never did  :-\
I am not experienced at all, don't know where to start so I keep postponing 

If you really like it I'd recommend you both soup and salad  :D

Have you tried growing your own herbs farfallina, they don't take up much space and it's so handy to be able to pick them as you need them - cheaper too  ;)

Once I had bought rosemary, mint, thyme, sage and basil. I kept them in the vases in my balcony
Then, dunno why, they got small insects. And then I threw them all  :-\
Since then I kind of gave up  :-[

I should try to cultivate rosemary, thyme, sage at least in my balcony  :-\
It is easier to steal though  ;D

Grazie for the fennel & orange salad recipe.  It is one of my favourites - viva Sicilia as they would say. 

I am making fennel & tomato gratin tonight

Just put the breadcrumbs on top & arghhhhhh - remembered now that I left the lemon rind out   :-)) :-))
