Mushroom Risotto - Australian demo version
« on: September 02, 2009, 02:35:54 pm »

CreamPuff, here's my demo recipe (I can't find the "official consultant recipe" but it will be similar):

200g parmesan cheese cubed
few dried porchini mushrooms
1/2 medium onion
50g olive oil
410g arborio rice
100g white wine (optional)
100g fresh mushrooms
1 desertspoon of chopped dried shitake mushrooms, soaked in water (pulse them in the tmx and store)
1-2 desertspoons veggie stock concentrate
1100g water
baby spinach, chopped asparagus or chopped zucchini (optional)

Add cheese to bowl and grate on speed 9-10 for 10 seconds. Remove and set aside.
Grind porchini mushrooms on spee 9-10 for 10 seconds.
Add onion and cut on speed 5 for 10 seconds or until chopped.
Add oil and saute for 2 mins, 100C speed 2.
Add wine, rice and 1/2 fresh mushroms. Saute for 2 mins, 100C, speed 2.
Add shitake mushrooms, vegie stock concentrate, water. Cook 100C, 16 mins, Reverse speed 1 1/2.
Tip - it will probably start 'spitting' - remove MC and replace with basket on top of the lid, which will allow air in and out without letting the food splatter everywhere.

Add spinach, chopped asparagus or chopped zucchini to Thermoserver.  Pour Risotto over top. Don't worry if it's still a bit soupy as it will continue to cook in the Thermoserver. Leave for 5 minutes then serve with fresh parmesan cheese.

TIP: If you wish to make the risotto 1/2 hr before being served, cook for 13-14 minutes and let it continue to cook in the Thermoserver.

I need to ask...what is the Thermoserver??  Ive seen it mentioned a few times.  I dont think they have that over here.  We just have the bowl, basket insert and the varoma and tray with lid???

i apologise in advance if its not the right place to ask questions!

Frozzie, the thermosaver is a stainless steel container used to hold your TMX cooked meal and keep it warm for quite some time. I love mine and wish I had 2. Imagine a thermos flask but as a straight sided bowl with a lid. As I am not very good at describing things, I have found a picture at
http://www.google.com.au/search?client=qsb-win&rlz=1R3GGLJ_enAU330AU330&hl=en&q=thermoserver+picture

it is the 2 top right hand side pictures - shown without the lid on.

thanks JD..I have just sent an email to my consultant over here to ask if she has ever heard of it!  I have never seen it mentioned other than in oz so think it may be difficult to get hold of one.

Yes, I don't think it is available in the UK Frozzie. If enough people enquire about it though, surely they would look into getting some.

I have been told that Grace (Thermomix Aus) owns the patent to the Thermoserve. I am sure if enough people showed interest in other countries something should surely be able to be done - well you would think! If we can swap cook books etc  ;) ;)

Of course you are Frozzie, sorry about that.  I'm sure they would sell heaps overseas - they alone know the reason why they don't offer them I suppose.

Desperately trying to retrieve from my memory bank the brand name I saw on the bottom of a friends old thermoserver...will try and follow her up.

While I love my thermoserver at home I have had a few disasters with transporting meals in the thermoserver and have taken to using stainless steel containers with a top seal and popping them in a shopping bag eski or the kids lunch bags.  Keeps it just as warm and quite safe....on the right day we still smell Cyndi's potato curry in our car ;D

The stainless steel containers that I have found the essential companion have a silicone seal in the lid.  They keep airtight forever (and in the tropics we really get a good go at testing that out).
