Low GI salt free oil/fat free bread recipes wanted

I believe soy and linseed bread is low GI. You have some sourdough bread recipes without oil but I'd like to know how to make them without salt, I know you can use ascorbic acid in conventional bread as a subsitute for salt but I was told that won't work with sourdough bread.

This is our favourite bread recipe here.  My understanding is that it is low gi because of all the whole grains and seeds, and we try and eat low gi as much as possible.  It's a delicious bread, with lots of flavour.

I believe that salt helps preserve the bread, and that the oil helps with texture.  So maybe you can try the recipe without and swee what happens.

Dgg9879,  I make most of my bread without oil,  (both sour dough and dried yeast).  The salt prevents the yeast from developing too fast.  I would still put a pinch of salt in if this is allowable.  Low GI,  I don't know much about.but I often make LSA and add 20g to most loaves.  Good luck ,  let us know how you go.

Tuscan bread has no salt - but it is not low GI.  I love salt sorry.  Wonder if the www.sourdough.com site may have recipes?
