Gluten-free, dairy-free with no more than 1 egg cakes?

Does anybody have a handy substitute for the eggs in the GF Swiss Carrot cake recipe? Or any recipes handy that will make snacks for my cousin who is GF, DF and can eat no more than 1 egg in a cake?  :-))

VC, in the GF recipe book there is an Apple Polenta cake & a Blueberry Teacake with no eggs whatsoever.

Thank you :D! Off to check it out and wondering how I missed it!

I'm also going to try using mashed banana to sub for 3 of the eggs in the carrot cake :) .

leave the apple etc out for a vanilla / butter cake, add cocoa for a chocolate cake :) i'm sure you could do heaps of other flavours too

How many eggs are in it?  Can you use Orgran No Egg to sub in the resst?

I like this recipe - Chocolate Banana Cake - it's gf and df and works fine without any eggs!  Also this Gingerbread cake has no eggs, and is gf and df.   :)
