Teff Pasta

Teff is an ancient grain from Ethiopia that is rich in iron, calcium and protein. We love the earthy taste and even people with conventional palates enjoy the steamed teff with brown rice pasta at our house  ;).


Name of Recipe: Teff Pasta
Number of People:4
Ingredients:
200 g Teff
350 g boiling water or vegetable broth
1 Pinch of Salt
Brown Rice Pasta
Snow Peas, Peas or Squash, Zucchini
Coconut Oil or Ghee

Preparation:
•Toast the teff in a hot skillet or wok for 2 minutes and stir quickly
•As soon as the teff starts to pop pour it into your TMX bowl with the boiling liquid
•Cook for  9 min/100°C/speed 1/reverse speed
•As soon as the temperature reaches 100°C turn down to 90°C and replace the clear cup with a kitchen paper towel
•Let stand for 5 minutes
•Meanwhile cook your pasta and add at the last minute the veggies and drain.
•Add teff and coconut oil, toss and serve

If only we could get teff grain/flour here in Oz!  We love eating teff injera when we are in Ethiopia! This looks lovely! ;D

There have been a couple of trials in Oz, but no great success so far.  :'(

Teff grain comes with quite a story actually (and she steps onto her soapbox  ;)).  Small teff crops are grown in some countries around the world but Ethiopia remains the major grower.  It's really quite sad because large quantities of teff are now exported out of Ethiopia each year, leaving small amounts of often inferior teff for the locals to purchase at inflated prices. Teff is only able to be grown in certain parts of Ethiopia so expanding the teff crops isn't an option in most areas.  Many of the locals are now "making do" with other less nutritious grains, which is ok until the next major food shortage (which is predicted in 2011).  In the past the poorer Ethiopians have sustained themselves on tiny amounts of the highly nutritious teff grain during food shortages, but sadly this won't be an option in the immediate future.

Anyway I will hop off my soapbox now. It's so easy to pick the Ethiopian-Mumma on the group!!! ;D  ;D ;D
