Too much sauce??

Is it just me or do you find that a lot of the dishes (beef stroganoff, fast chicken curry, butter chicken) have waaaay too much sauce.? I always feel like I'm playing "hunt for the pieces of chicken" when serving up out of the bowl. What do you do about this? Do you reduce the liquid components of the recipes? I often increase the meat and vegetables but there is always still way too much sauce.

I think I agree with you in that some recipes do produce a lot of sauce.   What I do, however, if there is too much sauce is freeze it and then reuse it at some point later with added meat or fish.   

Sometimes I think the recipes ask you to cut the meat too small so that by the time it has cooked it is almost invisible - I tend to cut it bigger than suggested and, if necessary, cook  it for a bit longer

Yes I also think there is too much sauce. I do what  Katya does and remove half and freeze it for next time.

i agree there is alot of sauce but we actually like it that way! one thing you can do, for example in the butter chicken recipe from the indian cookbook, is double the amount of chicken in, it if you are serving a quite a few and there is easily enough sauce for it.
but i have also saved the excess sauce for another time to

Can never have too much sauce, lol. There is a lot of sauce but that's how I like it (I often even make even more). Sometimes I'll add extra meat to the leftovers for lunch the next day but we are cutting down on meat here so use less than the recipe says in general.

I do the same. Freeze it into single serves. When we have left overs night every one gets to pick their sauce or dish and we just defrost and add vege's or meat. Got to love left overs.

Maybe copius quantities of sauce helps produce a better dish in the TMX, it certainly would help move the contents better.  I also freeze excess sauces but make sure they are clearly marked & keep an inventory otherwise they will just sit in the freezer and end up being thrown out.
